Description

Traditional colatura di alici from Cetara, crafted by Armatore using sustainably fished anchovies. Naturally aged in wooden barrels for months to develop a deep, savoury umami flavour. Presented in an elegant orcio bottle, ideal for gourmet retail and fine dining.
  • Produced by drawing off the liquid given off by curing anchovies under salt.
  • Richly briny and savoury, colatura is more complex and less fishy than Asian-style fish sauce.
  • Sprinkle a few drops on roasted vegetables, fresh tomatoes, avocado slices, roasted meat and scallops.
