The cedar fruit is characterised by a thick peel and has numerous healthy properties. There are many varieties of this citrus fruit which are divided mainly into two categories: sweet and sour. In Italy, the most widespread variety is the Smooth Cedar of Diamante which is cultivated in Calabria and is mainly used in the production of candied fruit.
