Manufactured in Fortwenger's workshops in Alsace, this festive special is made by pastry chefs in Gertwiller and Ensisheim. Gertwiller is well known throughout the world as the capital of gingerbread and bakery items. Preparation of the dough with honey, rye flour and oil, shaping of the various pieces, baking, and hand decoration: these are the skills that require a lightness of touch and a love of the craft.
