Description
Zampone IGP is a traditional cured pork sausage. It is made from a mixture of lean pork and pork fat, seasoned with spices. The mixture is then stuffed into the cleaned hind trotter of a pig, which is then tied and slow-cooked or simmered in broth for several hours to tenderize the meat.
