An intense red piece of meat is obtained from the oval-shaped head of the loin. It is highly infiltrated in fat and has fine muscle fibres that make it very tender and pleasant to the palate. Coming from Iberian pigs selected from birth, raised in freedom and with an exquisite diet prepared in farms and pastures based on natural cereals, acorns and grasses, tubers and roots.
