Gorgonzola is made from cow's milk, and its production involves a specific technique that leads to the development of characteristic blue-green veins. After pasteurization, the milk is inoculated with Penicillium mold spores, which give the cheese its distinct blue veining. It is then allowed to ripen in a controlled environment.
