Description
This is ‘extra’ quality desalted cod loin skin-on boneless, so the quality is the best available. The meat is particularly thick and tender and there are very few small bones to pick out. The cod is salt-cured in the traditional Italian way in 21 days using pure, natural sea salt.
- Premium cut from the center of the cod fish. Soft and buttery.
- Cut to a size that's easy to handle for the desalting process and subsequent cooking.
- Ideal for classic dishes like Bacalhau à Brás, cod fritters, or Caribbean saltfish.
