Busiate is a pasta variety crafted by Morelli, renowned for its exceptional quality and attention to detail. It is considered one of the finest pasta options available, not only because of its high-quality ingredients but also due to the traditional artisanal techniques employed in its production. To create Busiate, only the finest durum wheat semolina is carefully selected. This choice of wheat ensures a superior texture and taste in the final product. Wheat is processed using traditional methods, preserving its natural properties and nutritional value. The pasta-making process involves slowly pressing the kneaded mixture using specialized machines. This gentle method ensures that the dough retains its integrity and results in pasta with a satisfying bite. After the dough is prepared, it is hand-rolled on frames to form the distinctive helical shape of busiate.
  • Once shaped, the pasta is carefully dried in storage rooms for a period of 36 hours. The drying process is conducted at a controlled temperature of no more than 45°/50°C. This meticulous approach helps preserve the intrinsic flavours and nutrients of the pasta, ensuring an exceptional culinary experience.
